Buddha Bowl
One of my favorite quick and easy meals is a Buddha Bowl. Grab a few desired ingredients and toss them together for a healthy and nutritious meal. Healthy doesn’t require hours of prep or cooking. The presented Buddha Bowl is just an example of what to include. Feel free to substitute any of the items for something that you desire. There is no wrong way to create your own bowl (just keep the ingredients healthy with lots vegetables! ) Get creative!
Ingredients:
1 Cup organic quinoa
1 Cup vegetable broth
2 Cups water
2 avocado
1 Cup chopped tomatoes and onions
1 Cup black beans
1 Cup corn
1 Cup brussel sprouts
Pre-heat oven to 400°.
Line a baking pan with parchment paper. Chop your desired vegetables and gently toss them with avocado oil and place them on the parchment paper. Cook for approx. 15 minutes.
Gently boil quinoa with the vegetable broth and water for 7-9 minutes (or as your desired texture is achieved).
Gently rinse black beans in water. Cook them in a gentle simmer for 6 minutes.
In a separate pot, gently simmer the corn for 6 minutes.
While the above ingredients are cooking chop the tomatoes and onion, then slice the desired amount of avocado.
Turn off heat and drain any excess liquid from the quinoa. Rinse in cool water to halt the cooking process.
Drain the black beans & corn. Remove the brussel sprouts from the oven.
Plate your finished items as desired. Add a little sea salt or desired seasoning. ENJOY!
