Quinoa Side Salad

I recently made this side salad for a recent family gathering and it was a huge hit! Easy to make and packed full of vitamins and nutrients! This salad is tasty without any dressing. I offered Italian dressing and balsamic vinaigrette dressings and they both paired nicely with the salad.

Ingredients

  • 2 avocados

  • 1/2 cup cherry tomatoes

  • 1/3 cup red onion

  • 1/2 cup quinoa

  • 1 cucumber

  • 1 yellow bell pepper

  • 1/4 cup dill

  • 1/2 cup parsley

  • 2 cloves of garlic

  • 1 can chick peas

  • salt

  • pepper

  • olive oil

  1. Drain can of chick peas and rinse in warm water. On medium heat add olive oil to pan, warm and lightly brown chick peas.

  2. Bring quinoa to a light boil for 7-9 minutes (depending upon your personal preference). After you cook your quinoa drain them and rinse quinoa under cool water (this halts the cooking process).

  3. Prep your veggies! Chop red onion, cucumber, bell pepper, and half cherry tomatoes. Place into bowl.

  4. Finely chop dill and parsley. Add to bowl with vegetable mixture and lightly toss.

  5. Add in the cooled chick peas and cooled quinoa. Gently mix all ingredients together.

  6. Immediately before serving slice the avocado and add to the salad.

  7. Salt and pepper to taste.
