Stuffed Sweet Potato

Quick, easy, and packed with vital nutrients!

Eating healthy doesn’t have to be complicated or labor intensive.

Ingredients:

1 sweet potato

1/2 cup quinoa

1/2 cup black beans

1 ear of corn

1 avocado

Directions:

  1. Wrap sweet potato in foil and cook at 400* for approximately 45 minutes. Remove from oven and allow to cool.

  2. Bring quinoa to a light boil for 7-9 minutes (depending upon your personal preference). After you cook your quinoa drain them and rinse quinoa under cool water (this halts the cooking process).

  3. Shuck corn and rinse. Bring to boil. After corn is cooked, cut corn from cob and place aside.

  4. In separate pan bring black beans to a very light boil. After beans are cooked, drain and place aside.

  5. Now that the sweet potato is cooled remove it from the foil and split it down the center.

  6. Stuff the potato with quinoa, black beans, and corn. Salt and pepper to taste.

  7. If desired slice an avocado for a side.
