Cucumber Roll-Up with Sun Dried Tomato Avocado Pesto

Ingredients

2 cucumbers

1 c sun dried tomatoes in olive oil

1/4 tsp. pink himalayan salt

1/2 avocado

Crushed pecans or almonds for garnish (optional)

Directions:

  1. Add sun dried tomatoes, avocado, himalayan salt to a food processor. Blend well until combined into a paste

  2. Carefully using a mandolin, slice cucumbers into slices.

  3. Add the pesto paste into a piping bag and cut a small amount off the bottom.

  4. Using the bag, pipe a line of pesto down the middle of the cucmber slice.

  5. Carefully roll up the cucumber and stick a toothpick through to hold it together.

  6. Top with crushed almonds or pecans if desired.
