Roasted Brussel Sprouts with Apples
Ingredients:
2 lb brussel sprouts, trimmed
2 large apples, cored and cubed
1 med red onion, sliced
4 tbs organic maple syrup
1 tsp sea salt
2 tbs ground black pepper
2-3 sprigs of thyme
1 c pecans
Directions:
Preheat open to 400F.
Cut brussels sprouts in half. Add the brussels sprouts, onions sand apples together into a greased baking sheet or pan.
Mix the olive oil, maple syrup, salt and pepper together then drizzle over brussel sprout mixture, ensuring everything is coated.
Add sprigs of thyme on top of the brussel sprouts.
Bake for 40 min. Using a soft spatula stir the brussel sprouts a couple of times during cooking. The dish will be ready when the brussel sprouts are caramelized, the apples tender, onions soft.
Serve with a side of pecans.
