Crockpot Stoup
Quick, easy and hearty stoup to nourish your body.

Cook Time: 4 hours (crock pot low setting)
Total Time: 4 hours 15 minutes
Ingredients:
2 cups quinoa
2 cups vegetable broth
1 medium sweet onion
2 medium garlic cloves
3 tbsp. tomato paste
2 tbsp. Italian seasoning
28oz can fire-roasted tomato’s
2 bell peppers of your choice
2 cups carrot slices
1 bunch of broccolini
14 oz. lentils
Instructions:
Add vegetable broth, fire roasted tomatoes, and tomato paste to crockpot to mix together. Ensure that the ingredients are well blended.
Dice sweet onion, bell peppers, broccolini, carrots and garlic as desired and add to crockpot.
Add uncooked quinoa and can of lentils to crockpot.
Add Italian seasoning, salt and pepper as desired.
Stir to combine all ingredients. Set the timer for approx. 4 hours and let it simmer, stirring occasionally.

Notes:
You can add or omit any vegetable to suit your liking.
Add spinach! Add spinach approx. 5 minutes before serving.
Garnish with avocado!
