Berry Brunch

I’m all about the quick, easy, and protein packed meals!

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

  • 2 Cups Quinoa

  • 1 Cup Dried Cranberries

  • 1 Cup Fresh Blueberries

  • 1 Apple

  • 1 Lemon

Instructions:

  1. Add 2 cups quinoa to boiling water and cook for 7-10 minutes.

  2. While quinoa is boiling chop apple.

  3. Add chopped apple, washed blueberries, dried cranberries to a bowl. Slice lemon and squeeze fresh lemon juice onto fruit. Mix all together.

  4. Drain quinoa and rinse under cold water.

  5. Add cooled quinoa to fruit mixture and toss together.

Notes:

Add any fruits of your liking to your Berry Brunch!
