Kale Salad with Almonds & Cranberries

DESCRIPTION

This healthy kale salad is topped with a warm cranberry almond and a vinaigrette.

INGREDIENTS

  • 3 Tbsp. olive oil, divided

  • 1 cup dried cranberries

  • 2 Tbsp. apple cider vinegar

  • 2 teaspoons maple syrup

  • 1/8 tsp. salt

  • 1/8 tsp. black pepper

  • 1 bunch kale, very thinly sliced

  • 1/4 cup sliced almonds

  • 1 Tbsp. spiced mustard

    INSTRUCTIONS

  • Thoroughly was kale and slice into small pieces.

  • In a large bowl, toss the kale with a pinch of salt, and massage kale with your fingers for 1 minute until tender. Add in the dried cranberries and sliced almonds.

  • In a salad dressing shaker combine olive oil, apple cider vinegar, maple syrup and spiced mustard. Mix well.

  • Top with vinaigrette and serve.
