Zucchini Fritters

Ingredients:

1 zucchini

1 sweet potato

1 small onion

1 egg

1/2 cup gluten-free flour

1/2 tsp salt

1/2 tsp garlic

Any herbs desired

Avocado oil

Directions:

  1. Rinse zucchini and grate into a mixing bowl. Peel and grate sweet potato and onion into the same bowl. Drain as much excess liquid as possible by pressing the mixture into a fine sieve.

  2. In separate bowl mix together egg, flour, salt, garlic and herbs.

  3. Add vegetable mixture to flour mixture and thoroughly combine.

  4. Roll mixture into balls and flatten into 2-3 inch patties. If the mixture is too wet an doesn’t hold together add more flour a little at a time until it reaches the proper consistency.

  5. Fill a frying pan with avocado oil at least 1/2-inch deep. Cook fritters on medium high for about 3-4 minutes per side. Turn once or twice until golden brown and crispy on both sides.

  6. Once cooked remove from the pan and place on a plate lined with a paper towel to help absorb extra oil.

  7. Let cool for 2-3 minutes before enjoying!
