Zucchini Fritters
Ingredients:
1 zucchini
1 sweet potato
1 small onion
1 egg
1/2 cup gluten-free flour
1/2 tsp salt
1/2 tsp garlic
Any herbs desired
Avocado oil
Directions:
Rinse zucchini and grate into a mixing bowl. Peel and grate sweet potato and onion into the same bowl. Drain as much excess liquid as possible by pressing the mixture into a fine sieve.
In separate bowl mix together egg, flour, salt, garlic and herbs.
Add vegetable mixture to flour mixture and thoroughly combine.
Roll mixture into balls and flatten into 2-3 inch patties. If the mixture is too wet an doesn’t hold together add more flour a little at a time until it reaches the proper consistency.
Fill a frying pan with avocado oil at least 1/2-inch deep. Cook fritters on medium high for about 3-4 minutes per side. Turn once or twice until golden brown and crispy on both sides.
Once cooked remove from the pan and place on a plate lined with a paper towel to help absorb extra oil.
Let cool for 2-3 minutes before enjoying!
